Two-ingredient Pancakes

These simple, nourishing pancakes are a go-to in our house. Perfect for busy mornings or an easy snack, they’re made with just one ripe banana and one egg — that’s it!



Basic Recipe:

  • 1 large ripe banana

  • 1 large egg


Blend them together (I use my Nutribullet) until smooth. Create small size pancakes. Cook in a pan with a little butter or coconut oil over medium heat until golden on each side.



Notes:

  • The size of your banana and egg will affect the texture, so you might need to experiment to find your ideal ratio.

  • If I use two eggs, my kids say they taste too eggy — so I usually stick with one!

Optional Boosts (when I want to sneak in some extra goodness):

  • 1 tbsp chia seeds or LSA

  • A sprinkle of cinnamon


They’re naturally sweet from the banana, soft, and just the right size for little hands.
